The Geisha variety is celebrated worldwide for its refined elegance and expressive aromas. At Finca Xilontla, it offers a vibrant and complex cup with notes of chocolate syrup, orange sorbet, and juicy undertones, showcasing the variety's remarkable potential when grown in the fertile highlands of Veracruz under sustainable and meticulous cultivation.
Finca Xilontla, located in the lush highlands of Cosautlán de Carvajal, Veracruz, was established in 2018 as part of the Cadena family’s coffee-growing legacy. Its name comes from the ruins of a 19th-century hacienda that still stands on the property, a symbol of history and tradition.
Spanning 85 hectares, 40 of them dedicated to coffee cultivation at 1,350 masl, the farm focuses on high-quality varieties such as Geisha, quickly positioning itself among Mexico’s specialty coffee references.Finca Xilontla’s Geisha is processed through a 38-hour anaerobic fermentation under controlled conditions, followed by a slow 25-day drying period on raised African beds. This extended natural method allows for full cherry fermentation, enhancing the coffee’s complexity and expressiveness. The entire process is supported by sustainable farming practices, such as the use of tephrosia and green manure, which preserve soil health and maintain coffee quality.
